Apple Vegan Quick Bread

I am trying to come up with a fairly generic vegan quick bread recipe that I can use with persimmons, bananas, etc. I tried it out with apples and the bread turned out great. I added walnuts and almond flour, which gives it a rich flavor.  It doesn’t rise real high, but it’s not heavy, either.  Try a slice by itself or with margarine or peanut butter.  Just delicious.

Whisk these dry ingredients together

  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp double acting baking powder
  • 1 tsp pumpkin pie spice
  • 2 tsp cinnamon
  • 2 cups any flour combo you want – For this particular recipe, I used 1 1/4 cup oat flour, 1/4 cup almond flour, and 1/2 cup regular flour.
  • 1/4 cup brown sugar

Mix these wet ingredients together

  • 1 T vanilla
  • 1 cup applesauce
  • 1 apple, grated

Fold the dry ingredients into the wet ingredients.  I also threw in a handful of walnut pieces.

Pour the batter into a loaf pan (I always line my pans with parchment paper because I hate washing pans

Bake at 350 until a knife inserted in the middle comes out clean.

It rises about two inches.  This apple vegan quick bread is delicious with margarine on top, or just by itself.
